This is such a simple recipe and I’m probably totally late to the party because people have been making these for years but when I find something I really love, I have to share! Maybe, just maybe there are a few of you out there that are like me and have never had this delicious, wonderful, tasty sandwich before. I have to give credit where it’s due and I got this recipe out of my CookingLight Fresh Food Fat 24/7 book. It’s been a good go to book for quick meals….. so here you go! Oh – this technically makes four whole sandwiches. I ended up splitting it into two. I saved half the avocado spread and the other ingredients to bring to work with me to make for a quick work lunch!
Creamy Avocado Spread
1 peeled ripe avocado, mashed
1 tablespoon fresh lemon juice
1 garlic close, minced
1/4 tsp. salt
1/4 tsp. ground red pepper (I used shredded because that’s what we had and it was fine too)
1/2 cup creamy Avocado spread
8 or 4 slices whole wheat bread
2 cups (or handful) of salad greens (I used spinach)
4 slices tomato (1 or 2 per sandwich)
8 cuts bacon (more of less depending on how many you want on your sandwich. I only put two on mine)
Spread half of the Creamy Avocado Spread over one slice of bread. Top each with desired amount of greens, 1 or 2 tomato slices, and 2 bacon slices. Top with raining bread slice.
That’s it! So easy and you can customize it depending on how much Avocado, greens, tomato and bacon you want on it! Can’t wait to have it again tomorrow :)
